Curried Meatballs

Hello Friends! We had several requests for recipes based on a recent social media post that featured images of our recent kitchen adventures. This curried meatball recipe was created completely off the cuff but turned out really well! We will probably tweak it because its what we do :) however we think it was pretty good for a first attempt thanks to the wonderful curry spice blend we used. Caveat, as per our usual, we measured the spices and other seasonings by eye so please feel free to adjust any or all amounts to suit your own taste.   Curried Meatballs in Creamy Coconut Sauce MEATBALLS: 1 lb ground meat. We used beef but I think pork or chicken would be fantastic as well 1 large egg 1 tsp curry powder -we used a mild Malaysian ginger curry blend with ginger being the primary spice but it also contains cumin, coriander, cardamom, celery powder, chili powder, cinnamon, cloves, turmeric and black pepper. A nice red Thai curry powder would be a good alternative. 1 tsp sea salt...

Growing up there you learn early that the place to be in the summer was at the shore, North or South, either one would do. As it was, my brother and I spent the majority of our formative years being raised by our single mother. Coconut Chicken Thai Red Curry. No, really, we're not just a food blog!

 As promised in our IG post yesterday, we are blogging about the wonderful Thai Coconut Chicken we prepared last night using the Thai Red Curry spice blend from the Spice & Tea Exchange in St. Augustine. Yes, Spice & Tea Exchange is a franchise but we love visiting both the uptown and downtown locations when we are there. As the name implies, they have a ton of spices and teas! Let’s face it, nothing ruins a great day on the water more than having your breakfast revisit you on its way to feed the fishes! Some folks seem to have an immunity to such worries but if you’re like me you know what I’m talking about.
