Tequila-Lime Chicken/Shrimp Skewers

Tequila-Lime Shrimp Skewers:
Prep Time: 30 min
Cook Time: approx. 10 min
Ingredients
1 lb. of uncooked, deveined, and peeled large shrimp OR 1
lb. of chicken breast, cut into 1-inch pieces
2 tbsp or to taste- Good Life Rambling’s
Spanish Gold spice mix
2 tbsp. cooking oil. Olive or avocado oil work well
1.5 oz. tequila- something like your basic Jose Cuervo is
perfect
Juice and zest of 1 lime
Optional- 4 cloves of fresh garlic, finely minced
Skewers- we use bamboo ones, but any material is fine
Now, we have cooked these skewers in several ways including
baked in the oven and sautéed on the stovetop, but our favorite way is grilled
on the barbeque, big surprise, I know! The
directions below are for grilling so please note your cook times will vary
using other methods.

Directions
If you are using bamboo skewers, soak them in water for
about an hour prior to firing up the grill. The absorbed water will help
diffuse the heat from the grill and help your meat stay juicier.
Start out by zesting the lime, set zest aside. Juice the
lime. You want approximately 2 tbsp of juice.
Add the lime juice, oil, and tequila to a medium mixing
bowl, mix thoroughly. Add GLR’s Spanish Gold, mix again. If desired add the
garlic and you guessed it, mix again. We love garlic so we always add it but
you don’t need to.
Add your chicken or shrimp to the bowl and stir until the
meat is evenly covered. Cover the bowl tightly with plastic wrap or a lid.
Allow to marinate for a max of 20 min in the fridge. Any longer and the lime
juice will begin cooking the meat and end up with a sort of ceviche!
After a maximum of 20 min in the fridge it is time to skewer
your meat, so fire up the grill to a medium high heat and let us get cooking!
Be sure to leave a little space between pieces of meat to allow for more even
cooking.
Once the grill is to temperature, arrange the skewers on the
grill surface. Lower the heat if you get flareup. If it continues, try moving
the skewers to the outside of the grill too. Ideally, you want to cook them for
about 5 minutes on a side, but it is most important to cook the meat thoroughly.
For chicken, 160 F or 70 C, for shrimp, 145 F or 63 C. A decent, grill friendly
meat thermometer is your friend!

Suggestion:
We love to add vegetables to these skewers too, cut up bell
peppers and onions, whole cherry tomatoes and sliced mushrooms are favorites. It
is best to cut your veggies in a consistent size to facilitate even cooking. Alternate
pieces of veggie and meat careful not to overpack the skewer.
